Stuffed Peppers

Ingredients

6 large green peppers
2 lbs. ground beef
2 tbsp. chopped onions
26 ounces Family size tomato soup
2 cups cooked white rice
1 tsp. salt
1/4 tsp. garlic salt
3/4 cup shredded mozzarella cheese

Directions

  1. Clean peppers, remove tops and seeds.
  2. Cook whole peppers in boiling water, covering the peppers completely for 5 minutes, then drain.
  3. Cook beef and onion until browned.
  4. Stir in rice, salt, garlic salt, and tomato soup; heat until hot.
  5. Stuff peppers with rice mixture and place into an 8 x 11 x 2 baking dish.
  6. Cover and bake 45 minutes at 350 degrees.
  7. Uncover and bake 15 minutes longer.
  8. Sprinkle with cheese.
