Cheesy Chicken, Broccoli, and Rice

Ingredients

3 tablespoons extra virgin olive oil
1/2 medium yellow onion, diced finely
1 pound boneless skinless chicken breasts, cut into bite sized pieces
2 cloves of garlic, minced
1 teaspoon of kosher salt and freshly ground pepper to taste
1 cup Instant White Rice
2 1/2 cups broccoli florets, cut into bite sized pieces
1 can low-sodium chicken broth, divided
2 cups shredded extra sharp cheddar cheese

Directions

  1. In a large skillet or pan, saute onions in two tablespoons of olive oil over medium heat.
  2. In a separate pot, cook instant rice per package directions, substituting one cup of chicken broth for water
  3. Season chicken with salt and pepper.
  4. Once onions soften, increase the heat to medium high and add chicken to the pan.
  5. Brown the chicken pieces
  6. Add the garlic and cook for about 1 more minute.
  7. Add 1 cup chicken broth and bring to a boil
  8. Lower heat to a simmer and cover, cooking chicken for about 12 minutes, or until cooked through
  9. Sprinkle the broccoli evenly over the chicken stir to combine.
  10. Add 1/2 cup chicken broth
  11. Continue to cook covered another 8 minutes on low, or until broccoli is tender.
  12. Add rice and stir to combine.
  13. Remove from heat and stir in half a cup of cheese.
  14. Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.
