Uncle Andy's Mac and Cheese

Ingredients

3 cups medium macaroni
1/4 cup butter
1/4 cup flour
1 can evaporated milk
1 1/2 cups milk
1 cup heavy cream
1/2 tsp mustard powder
1/2 tsp cayenne
1/2 tsp chicken bouillon powder
1 tsp onion powder
3/4 granulated garlic (or 1/2 tsp garlic powder)
hot sauce (to taste, optional)
1/2 tsp black pepper
1/2 tsp salt
1 1/2 cups sharp cheddar, shredded
6 oz (or 1/2 cup) velveeta cheese, chunked
1 cup Monterey Jack cheese, shredded
3/4 cup gruyere cheese

Directions

  1. Cook and drain macaroni per package instructions
  2. Preheat oven to 375 degrees
  3. Grease a 9x13 casserole dish
  4. Measure and combine all spices into small bowl (mustard powder, cayenne, chicken bouillon powder, onion powder, granulated garlic, pepper, salt)
  5. Measure and combine all shredded cheeses in a medium bowl (sharp cheddar, Monterey Jack, Gruyere)
  6. In warm medium saucepan, melt butter
  7. Add flour and mix until paste forms
  8. Add evaporated milk, milk, and heavy cream and mix until warmed through
  9. Mix in spices until combined
  10. Add chunks of velveeta cheese and stir until melted (careful not to burn)
  11. Add half of shredded cheese mix and stir until melted
  12. Combine cooked macaroni and cheese sauce in greased casserole dish until evenly coated
  13. Top with remaining shredded cheese mixture
  14. Back for 20 minutes
