Strawberry Cheesecake Pie

Ingredients

1 Prepared 9-in shortcake crust (or graham cracker)
8 oz Cream cheese, softened
1/2 cup Granulated sugar
1 tsp Grated lemon peel
5 fl oz Evaporated fat free milk
1 large Egg
2 Tbsp Flour
2 cups Halved fresh strawberries

Directions

  1. Preheat oven to 325.
  2. Combine evaporated milk, cream cheese, egg, sugar, flour, and lemon peel in a blender.
  3. Blend until smooth.
  4. Pour into the crust.
  5. Bake for 35-40 minutes or until the center is set.
  6. Cool completely in pan on wire rack.
  7. Refrigerate well before serving.
  8. Serve with fresh strawberries.
