Strawberry Cheesecake Pie

Ingredients

1 Prepared 9-in shortcake crust (or graham cracker)
8 oz Cream cheese, softened
1/2 cup Granulated sugar
1 tsp Grated lemon peel
5 fl oz Evaporated fat free milk
1 large Egg
2 Tbsp Flour
2 cups Halved fresh strawberries

Directions

  1. Preheat oven to 325
  2. Combine evaporated milk, cream cheese, egg, sugar, flour, and lemon peel in blender
  3. Blend until smooth
  4. Pour into crust
  5. Bake 35-40 ,minutes or until center is set
  6. Cool completely in pan on wire rack
  7. Refrigerate well before serving
  8. Serve with fresh strawberries
