Mini Meatloaf Pepper Rings

Ingredients

4 large bell peppers (red, yellow, or orange)
2 lbs lean ground beef
1 1/2 tsp creole seasoning
1/2 cup Italian bread crumbs
1 egg
1/2 cup shredded Parmesan
pinch crushed red pepper flakes
3 cloves garlic, finely chopped
1 TBSP Olive oil
1 TBSP Fresh chopped parsley
1 cup shredded Italian cheese blend
28 oz crushed tomatoes

Directions

  1. Pre-heat oven to 350 degrees
  2. Prepare peppers by slicing off a little of the top and bottom of each pepper (do not discard) and cut out ribs and seeds.
  3. Slice each pepper into 3 thick rings.
  4. Dice remaining pepper
  5. In a large bowl, combine ground beef, seasoning, bread crumbs, egg, Parmesan, red pepper flakes, garlic, and diced peppers until combined
  6. Heat olive oil in a large oven-safe pot over medium-high heat
  7. Place pepper rings into pan/oven-safe pot and fill each ring with meat mixture leaving a dome of the meat on top of each pepper ring
  8. Cover pan/pot and brown each stuffed pepper ring 4-5 minutes on each side
  9. (Transfer browned pepper rings to oven-safe dish if stove stop pan used for browning)
  10. Pour crushed tomatoes over stuffed pepper rings in oven-safe pan/dish
  11. Cover and bake 45-50 minutes, or until internal temperature reaches 175 degrees
  12. Top with cheese and bake 5-10 more minutes
  13. Top with fresh parsley and serve
