Swiss Meringue Icing

Ingredients

4 egg whites
1 cup granulated sugar
pinch salt
3 sticks unsalted butter, cut into chunks
1 tsp vanilla extract
1 candy thermometer

Directions

  1. In a double boiler mix together egg whites, sugar, and salt.
  2. Heat until the mixture reaches 165 degrees.
  3. Place mixture into a stand mixer; beat until stiff peaks form.
  4. Add in butter a chunk at a time.
  5. Mix in vanilla.
  6. Mix for a long time until it looks like icing.
