Swiss Meringue Icing
Ingredients
4 egg whites
1 cup granulated sugar
pinch salt
3 sticks unsalted butter, cut into chunks
1 tsp vanilla extract
1 candy thermometer
Directions
In a double boiler mix together egg whites, sugar, and salt.
Heat until the mixture reaches 165 degrees.
Place mixture into a stand mixer; beat until stiff peaks form.
Add in butter a chunk at a time.
Mix in vanilla.
Mix for a long time until it looks like icing.
