Scallion Mashed Potatoes

Ingredients

6 Yukon Gold potatoes
1 scallions
6 TBSP of sour cream
2 TBSP butter

Directions

  1. Dice potatoes into 1/2 inch pieces
  2. Trim and thinly slice scallions, separating whites from greens
  3. Boil potatoes in a medium sauce pot with enough salted water to cover by 2 inches, 15-20 minutes, until tender
  4. Reserve 1/2 cup potato cooking liquid
  5. Drain potatoes and return to pot
  6. Mash potatoes with 6 TBSP of sour cream and 2 TBSP butter until smooth, adding splashes of reserve potato cooking liquid as needed
  7. Stir in half the scallion greens
  8. Season with salt and pepper and keep covered until serving
