Chicken Rice and Broccoli Skillet

Ingredients

3 TBSP extra virgin olive oil
1/2 yellow onion, diced finely
1 lb boneless skinless chicken, cut into bite sized pieces
2 gloves garlic, minced
1 tsp kosher salt
Black pepper, to taste
1 cup uncooked extra long grain white rice
2 1/2 cups chick broth
2 1/2 cups broccoli florets, cut into bit sized pieces
2 cups extra sharp cheddar cheese, shredded

Directions

  1. In a large skillet or pan, sauté onion in olive oil over medium heat.
  2. Season chicken with salt and pepper.
  3. When onions are softened, increase heat to medium-high and add chicken to the pan and cook until browned
  4. Add garlic and cook for about 1 more minute
  5. Push chicken to one side of the pan and add 1 TBSP of olive oil to the other side of the pan
  6. Add the uncooked rice in the olive oil and sauté for a couple of minutes
  7. Add the chicken broth to the pan and bring to a boil.
  8. Lower the heat to a simmer, cover and cook for about 12 minutes.
  9. Sprinkle the broccoli evenly over the chicken and rice mixture. Stir to combine
  10. Continue cooking covered another 8 minutes on low, or until the broccoli and rice are both tender
  11. Remove from heat and stir in a half a cup of cheese
  12. Sprinkle remaining cheese on top and cover, letting it sit for 1-2 minutes or until cheese is melted.
