Sausage Penne Pasta

Ingredients

8 ounces uncooked penne pasta
4 strips bacon cut into small pieces
1 lb chicken sausage cut into bite-size pieces
2 cloves garlic minced
1/4 cup chicken broth
1 cup heavy cream
5 ounces tomatoes chopped small
1/2 cup freshly grated parmesan cheese

Directions

  1. Cook pasta al dente in salted water according to package directions.
  2. Meanwhile, cut up the bacon (I use kitchen shears to make this job easy) and fry it in a skillet over medium-high heat until crispy.
  3. Move the bacon to a paper towel-lined plate, leaving the bacon grease in the pan.
  4. Add the sausage and cook over medium-high heat until cooked/warmed through.
  5. Move sausage to the same plate as the bacon.
  6. Add the garlic and chicken broth to the pan. Scrape up any brown bits from the bottom of the pan. Let it cook for a minute or so.
  7. Add the cream and tomatoes. Cook for 2 minutes or until the tomatoes start to lose their shape
  8. Add back the sausage and bacon and let it warm through for a few minutes to let the sauce thicken a bit
  9. Stir in the parmesan and toss with the drained pasta. Season with salt & pepper if needed.
