Maryland Crab Cakes

Ingredients

1 lb. fresh lump crabmeat
1/2 cup mayo
1 large egg
1 tbsp. Dijon mustard
1 tsp. old bay
12-15 saltine crackers, crushed
1 cup oil

Directions

  1. Stir mayo, egg, mustard, and old bay in a medium bowl.
  2. Fold in crabmeat and crackers.
  3. Let stand for 3 minutes.
  4. Shape into 6 large cakes or 8 small.
  5. Place on a plate lined with parchment paper.
  6. Cover and chill for 1 hour.
  7. Fry cakes in hot oil over medium heat for 3-4 minutes.
  8. Drain on paper towels.
