Beef and Broccoli Instant Pot

Ingredients

2 lbs beef (chuck roast, rump roast, flank steak)
1 bag fresh broccoli
2 Tbsp garlic
1 tsp garlic
1 tsp ground ginger
1 onion
2 Tbsp brown sugar
3 Tbsp olive oil
2 Tbsp corn starch

Directions

  1. Start by slicing the meat against the grain in thin slices. Dice the onion and cut the fresh broccoli.
  2. In a medium bowl, combine the soy sauce, brown sugar, beef broth, garlic and ginger.
  3. Add this liquid mixture to the meat strips.
  4. Add about 3 tablespoons of olive oil or peanut oil to your pressure cooker and saute the onions until they are translucent in color. Place the pound of broccoli in the microwave on high for about 5 minutes with 1 cup of water. This will steam it to the perfect consistency. Works for both frozen and fresh broccoli. Drain the water from the broccoli and mix it in to the beef mixture in your pressure cooker. The beef and broccoli is done and ready to serve over rice! Sometimes I make it 2 or 3 different times until it comes out just perfect. Please disregard the sesame oil. I ended up not using it. I found the meat to be really tough. Do you know what I could do differently? I cut against the grain in strips that resembled your photo. Does the type of meat make a difference or maybe try lowering the cooking time? The flank steak was $22, so I didn’t go that route. I’m not sure if that’s a normal price for flank steak or if it was post hurricane Irma prices, but our options were slim. The $10 rump roast was more appealing. However, I don’t know how you cook rice in 3 minutes unless you are using instant rice. My white rice takes 12 minutes (or the button on the IP) and my brown rice takes 23 minutes. I do natural release because I have heard that the starchy steam can clog your valve. On the stove I do a 1:2 ratio rice/water. however, in the IP, I use a ration of 1:1.25 Some IP users use a 1:1 ratio. I think there is some adjustments needed at high elevations. I added a 1/2 tsp honey to the sauce and it turned out great!! I also added slices of bellpepper too! I put my fresh broccoli in with the meat and sauce and cooked 2 mins, since I had already cooked my roast the night before in the pressure cooker XL. We used stew beef and didn’t cut it any thinner. We didn’t have a microwave safe bowl so we tossed it in the Instant Pot and set it for 1 minute. It was a tad mushy, but still tasty.
