Aunt Liz's Chicken Spaghetti

Ingredients

1 lb ground chicken
2 tsp Italian seasoning
salt to taste
pepper to taste
4 Tbsp butter
2 Tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
4 Tbsp flour
1 1/2 cup chicken broth
3/4 cup milk
4 oz cream cheese, softened
1 cup cheddar cheese
10 oz Rotel tomatoes
1/2 lb thin speghetti
1 cup mozzarella

Directions

  1. In a pot, cook chicken with salt and Italian seasoning. Once cooked, remove and set aside.
  2. Preheat oven to 400 degrees.
  3. For Sauce:
  4. Melt butter in the same pot that the chicken was cooked in. Add onions and cook until softened.
  5. Add garlic and cook for 1 minute. Sprinkle flour over onions and cook for 2 minutes.
  6. Add chicken broth in splashes to make a roux. Stir in between. Whisk in milk. Let sauce simmer and reduce.
  7. Start a pot of boiling water for noodles and cook until al dente.
  8. Add cream cheese and stir continuously until melted and smooth. Reduce heat to low and let the base cool a bit.
  9. Sprinkle in cheddar cheese and stir to combine. Add Rotel and chicken. Stir in spaghetti noodles.
  10. Transfer to a slightly greased 9x13-inch pan. Top with mozzarella and bake for 15 minutes.
