Beef Vegetable Soup

Ingredients

1.5 - 2 lbs beef short ribs
1 bag mixed vegetables
1 med onion diced
2 cloves garlic
2 stalks celery
2 cans diced tomatoes
1/2 head cabbage
5 red potatoes
4 cups V8
2.5 cups beef broth
1 tsp Basil
1/2 tsp Oregano
3/4 tsp Salt

Directions

  1. Cook short ribs in crockpot until tender
  2. In pot sauté onions, celery, garlic for 3-4 mins
  3. Cut up short ribs and add to pot, along with all the contents of the crockpot
  4. Add all the rest of the ingredients except for the potatoes, cook 30 mins
  5. Add potatoes and cook an additional 20 mins
