Tomato Onion Jam

Ingredients

2 Roma tomatoes,diced
1 small yellow onion, thinly sliced
Chicken stock concentrate
2 tsp sugar
4 TBSP water
2 tsp smoked paprika
salt
pepper
olive oil

Directions

  1. Heat a drizzle of oil in a large pan over medium-high heat
  2. Add onion and cook until lightly browned (8-10 min)
  3. Add diced roma tomatoes, stock concentrate, paprika, sugar, and water
  4. Cook, stirring until caramelized and jammy (2-3 minutes)
  5. Season with salt and pepper
  6. Serve as a hamburger condiment: cover the bottom bun with Creamy Spiced Mayo, add burger with cheese, top with tomato jam
