Mexican Shredded Chicken

Ingredients

2 tsp chili powder
1/2 tsp paprika
1 1/2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp ground black pepper
1/2 tsp dried orrgano
1 TBSP extra virgin olive oil
2 lbs chicken breasts or thighs
10 oz chicken broth
1 lb block of White American cheese (from deli counter), shredded

Directions

  1. Combine all spices in a small bowl to make seasoning; Stir to combine
  2. Coat chicken on both sides with seasoning
  3. In a large skillet, drizzle olive oil and heat over medium heat
  4. Add chicken to oil and let cook 2-3 minutes on each side
  5. Add chicken broth, cover, and let cook for 20-30 minutes, until chicken is cooked through
  6. Remove chicken from pan, shred using a fork, then return to the skillet
  7. Stir to coat chicken in remaining sauce
  8. Keep warm on low heat for 3-5 minutes to get good flavor throughout
  9. Serve taco-style, with freshly shredded white American cheese, and your favorite taco toppings, such as salsa, sour cream, guacamole, shredded lettuce, black beans, Spanish or cilantro lime rice, or corn.
