Parmesan Garlic Chicken and Zucchini

Ingredients

4 thin Chicken breasts (or package or chicken tenderloins)
8 Tablespoons (divided) butter, divided
1/2 cup Italian bread crumbs
1/2 cup, plus1 Tablespoon Parmesan, grated
1/4 cup Flour
2 medium Zucchini
2 cloves Garlic, minced

Directions

  1. Melt 4 Tablespoons butter in shallow dish
  2. Mix bread crumbs, Parmesan cheese, and flour in another shallow dish.
  3. In a large skillet over low/medium heat, melt 2 Tablespoons butter.
  4. Dip chicken in melted butter, then coat in bread crumb mixture, and place in skillet.
  5. Cook chicken 3-5 minutes per side, until chicken is crispy and cooked through.
  6. Remove chicken from skillet.
  7. Add 2 Tablespoons of butter to the skillet.
  8. Saute minced garlic for one minute.
  9. Add zucchini to the skillet and saute until tender.
  10. Salt and pepper to taste.
  11. Add 1 Tablespoon Parmesan cheese to skillet.
  12. Re-add chicken to skillet and heat for 1-3 minutes.
  13. Serve immediately.
