Sheet Pan Flatbreads

Ingredients

1 green peppers
1 small yellow onion
16 oz pre-cooked turkey meatballs, sliced in thirds
4 flatbread
3 oz tomato paste
2 tsp Italian seasoning
1/3 cup water
3 TBSP butter
1 tsp sugar
mozzarella cheese
salt, to taste
pepper, to taste
drizzle of olive oil

Directions

  1. Pre-heat oven to 450
  2. Halve, core, and thinly slice bell pepper into strips
  3. Halve, peel, and cut onion into 1/2" thick wedges
  4. Line a baking sheet with foil
  5. Toss peppers and onion on foil with a drizzle of olive oil, salt, and pepper
  6. Roast on top rack of oven 8-10 minutes, or until veggies are almost tender
  7. Combine Italian seasoning, water, butter, and sugar in a microwave-safe bowl
  8. Microwave until water is hot and butter is melted
  9. Whisk in tomato paste until smooth
  10. Season with salt and pepper
  11. Spread half the sauce over flatbreads
  12. Toss meatballs in bowl with remaining sauce
  13. Top flatbreads with meatballs and remaining sauce from the bowl
  14. Once veggies are almost tender, transfer to a plate and carefully remove and discard the foil
  15. Wipe excess oil from the baking sheet
  16. Place flatbreads on baking sheet, and top with bell pepper, onion, and mozzarella, to your liking
  17. Bake 8-10 minutes, until flatbreads are toasted, cheese has melted, meatballs are warmed through, and veggies are lightly charred
  18. Transfer flatbreads to a cutting board, slice into pieces, and serve.
