Crispy Frank's Redhot-Spiced Chicken

Ingredients

6 TBSP sour cream
1-2 lbs chicken breasts
1 cup panko breakcrumbs
3 TBSP Frank's RedHot Original Seasoning Blend (powder)
1 scallion
3 oz Blue Cheese Dressing
2 tsp Hot Sauce
2 tsp Olive oil
1 tsp cooking oil
4 TBSP butter

Directions

  1. Preheat oven to 425 degrees
  2. Trim and thinly slice scallions, separating whites from greens
  3. Butterfly chicken breasts
  4. Pat chick dry with paper towel and season with salt and pepper
  5. Melt 4 TBSP butter in a microwave safe dish
  6. Combine panko, Frank's RedHot Seasoning Blend, and a pinch of salt and pepper, with melted butter
  7. Brush a thin layer of sour cream onto tops of the chicken fillets
  8. Dip brushed side of chicken into panko mixture, pressing to adhere (no need to coat the undersides)
  9. Place chicken coated sides up on a second, lightly oiled, baking sheet
  10. Roast chicken 20-25 minutes on middle rack, until browned and cooked through
  11. Combine blue cheese dressing, scallion whites, Hot Sauce and remaining sour cream in a small bowl
  12. To serve, top chicken with blue cheese sauce and remaining scallion greens
