Collard Greens

Ingredients

1/2 lb ham hock
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 Tbsp seasoned salt
1 Tbsp Texas Pete hot sauce
2 Tbsp brown sugar
1 large bunch of collard greens
8 Tbsp (1 stick) butter

Directions

  1. In a large pot, bring 3 quarts of water to a boil, and add ham hock, seasoning, and hot sauce.
  2. Reduce heat to medium and cook for 1 hour.
  3. In the meantime, wash collard greens thoroughly. Remove the thick stem running down the center of the greens by holding the leaf in your left hand and stripping it with your right hand.
  4. Stack 6-8 stripped leaves on top of one another, roll up, and slice into 1/2-to1-inch thick slices.
  5. Place the greens in the pot with the cooked ham hock.
  6. Add butter after the greens.
  7. Cook for 45 to 60 minutes, stirring occasionally.
  8. When done, taste and adjust seasonings.
