Lo Mein

Ingredients

2 tablespoons hot chicken stock or water
1 1/2 TBSP oyster sauce
2 TBSP soy sauce
1/2 tsp salt ((or to taste))
1/2 tsp sesame oil
1/4 tsp sugar
1/8 tsp pepper
1 lb fresh lo mein noodles
2 cloves garlic ((minced))
1 cup carrot ((julienned))
3 cups napa cabbage ((shredded))
1 cup snow peas
2 tablespoons olive oil
2 green onion

Directions

  1. Prepare the lo mein sauce by combining 2 TBSP of hot stock/water, oyster sauce, soy sauce, salt, sesame oil, sugar, and pepper in a measuring cup or medium bowl.
  2. Boil lo mein in a large pot of water until they are al dente.
  3. Prepare the garlic and all the vegetables to have them ready for cooking while the lo mein boils.
  4. Drain and rinse the lo mein thoroughly in cool water. Drain thoroughly and set aside.
  5. Warm the pan over medium-high heat until it just starts to smoke, then add the oil.
  6. Add the garlic, carrots, and napa cabbage. Increase the heat to high, and stir-fry for 1 minute.
  7. Add the lo mein noodles. The noodles should be warm or at room temperature not stuck together! If they are, just rinse them in warm water to loosen them up.
  8. Pour your pre-mixed sauce evenly over the noodles, and stir-fry with a scooping motion for 1 to 2 minutes, or until the sauce is evenly distributed. Make sure to scrape the bottom of the wok to prevent the noodles from sticking. High heat and a well-seasoned wok should also prevent sticking.
  9. Add the scallions. Give your lo mein a quick taste and adjust the seasoning to your liking. Add more salt, soy sauce, oyster sauce, sesame oil, or pepper according to your preference.
  10. Plate your lo mein and serve with homemade chili oil or hot sauce on the side!
