Spinach Dip (Warm)

Ingredients

16 oz spinach, chopped
1 tbsp oil
4 cloves garlic, crushed
8 oz cream cheese, cubed
1/2 cup heavy cream
1/2 cup parmesan cheese, grated
1 1/2 cups Monterey Jack cheese, grated
1/2 tsp salt
1/2 tsp ground black pepper

Directions

  1. Chop, grate, and measure spinach and cheeses
  2. In a non-stick skillet, saute garlic in oil
  3. Add spinach and cook over medium heat until spinach leaves wilt **NOTE: Over-heating spinach can make the green color dull
  4. Stir in cream cheese until melted
  5. Add heavy cream, parmesan cheese and Monterey Jack cheese, salt, and pepper
  6. Heat thoroughly until bubbly and smooth
  7. Serve with pita or tortilla chips from warm skillet or crock pot on warm setting
  8. **BONUS: Broil with additional cheese for a restaurant-style dip
