Pineapple-Jicama Salad

Ingredients

2 limes
2 tablespoons olive oil
2 tablespoons finely chopped cilantro
1 shallot
1 tsp. hot sauce
1 tsp. honey
1/4 tsp. ground cumin
1/4 tsp. kosher salt
1 bunch watercress or arugula
2 cups fresh pineapple, cubed
1 small jicama or green apple
1 thinly sliced red or green jalapeno

Directions

  1. Whisk lime juice, olive oil, cilantro, shallot, hot sauce, honey, cumin, and salt in a large bowl.
  2. Toss with watercress/arugula, pineapple, jicama/green apple, and jalapeno; season with salt.
