Ingredients
1 cup granulated sugar
1/2 cup vegetable oil
1 large egg
1 tsp vanilla extract
2 cups flour, divided
2 1/2 tsp baking powder
3/4 tsp salt
3/4 cups, plus 2 TBSP, milk, divided
Directions
Preheat over to 350 degrees
Grease an 8x8 square pan (or 12 slot muffin pan)
In a large mixing bowl, add 1 cup sugar and 1/2 cup vegetable oil. Stir well until combined.
Add egg and one teaspoon vanilla extract. Stir well until combined.
Add baking powder, salt, and 1/2 cup flour. Stir well until combined.
Add part of the milk. Stir well until combined.
Alternate adding the remaining flour and remaining milk, stirring well after each addition.
Pour into prepared pan or muffin tin.
Bake for 45 minutes (8x8 pan) or 25 minutes (muffin pan)
Cool completely before serving with fresh strawberries, ice cream, and whipped cream
