Steak Kebabs with Quesadillas

Ingredients

2 cups fresh cilantro
3 scallions
2 lines
1 Tablespoon red wine vinegar
1 tsp Worcestershire Sauce
to taste Kosher salt
to taste black pepper
1/4 cup extra-virgin olive oil
1 1/4 lbs beef tri-tip steak
1 package flour tortillas burrito size
1 package pepper jack cheese, shredded
1 mango, peeled, pitted, and sliced

Directions

  1. Preheat a grill to medium-high heat.
  2. In a blender pulse together 1 3/4 cup cilantro, scallions, juice of 1 lime, Worcestershire sauce, large pinch of salt and pepper until chunky.
  3. With the motor running, add in olive oil and puree until combined, scraping down the sides of the processor as needed; season with more salt and pepper.
  4. Poke the steak with a fork to tenderize it, then cut into 1 inch cubes.
  5. Tear off 16-inch piece of foil and place 1 tortilla on the left side; top with cheese and if desired cilantro.
  6. Place another tortilla on top and fold foil over sealing the edges.
  7. Brush grill grates with olive oil and grill kebabs, turning occasionally 4-6 minutes for medium rare.
  8. Meanwhile, grill quesadilla until the cheese melts, about 2 minutes per side.
  9. Serve with remaining salsa verde, mango, and your favorite salsa.
