Chocolate Chip Pumpkin Bread

Ingredients

3 1/2 cups flour
3 cups sugar
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 (15 oz) can pumpkin
1 cup oil
4 eggs
2/3 cup water
3/4 cup mini chocolate chips
1/2 cup semi-sweet chocolate chips for topping (optional)

Directions

  1. Preheat oven to 350 degrees
  2. Grease 2 9x5 loaf pans or line with parchment paper
  3. In a bowl combine flour, sugar, baking soda, salt, cinnamon and nutmeg. Mix until well combined
  4. In a separate bowl mix together pumpkin, oil, eggs and water. Mix until well blended.
  5. Gently mix flour and pumpkin mixture together. When just barely combined add mini chocolate chips and fold into batter.
  6. Divide evenly between the pans. If using semi-sweet chocolate chips, sprinkle evenly over top of batter.
  7. Bake for 50-60 minutes until a tester comes out clean.
  8. Remove from the oven and let cool for 15 minutes before removing from the pans and cooling completely on a wire rack.
