Apple Pie Cupcakes

Ingredients

3/4 cup butter, room temperature
1 1/4 cup sugar
2 eggs
1/2 tsp vanilla
3/8 tsp almond extract
3/4 cup flour
3/4 cup cake flour
3/8 tsp baking powder
1/8 tsp salt
1/2 cup milk
1/4 cup sugar
3 cups peeled, diced apples
1 Tbsp flour
1/4 tsp salt
1/8 tsp nutmeg
1/2 Tbsp lemon juice
1/3 tsp cinnamon
1 Tbsp butter

Directions

  1. Preheat over to 350.
  2. Mix both 3/4 cups of flour with sugar, salt, and baking powder.
  3. Cut room temp. butter into cubes. Mix in flour until just blended.
  4. Separately beat eggs, vanilla, almond, and milk.
  5. Mix wet ingredients with dry a 1/3 at a time. Mix until just blended. Place into cupcake pans and bake for 15 or until done. Cool
  6. For filling mix remaining ingredients into a saucepan and cook until apples are softened. Cool for five minutes.
  7. Cut a hole into the cupcake and fill with apple filling.
  8. Top cupcakes with your favorite icing and crumb coating if desired.
