Instant Pot Beef and Broccoli

Ingredients

2 TBSP olive or canola oil
1 1/2 lbs flank steak, cut into strips
4 garlic cloves, minced
3/4 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
2 TBSP sesame oil
1 lb broccoli, cut into florets
3 TBSP water
3 TBSP cornstarch
white rice (as a side)

Directions

  1. Set Instant Pot to sauté and warm olive or canola oil.
  2. Brown flank steak in batches.
  3. Add beef broth, garlic, soy sauce, brown sugar, and sesame oil and mix until brown sugar is dissolved.
  4. Mix in all browned flank steak.
  5. Lock lid with pressure value sealed. Cook on high pressure for 10 minutes.
  6. Quick-release the pressure and remove lid.
  7. Change setting back to sauté.
  8. Add cornstarch and water and mix until smooth.
  9. Add broccoli and stir.
  10. Lock in lid and allow broccoli to cook to desired firmness (3-5 minutes).
  11. Serve over rice.
