Chicken Marsala

Ingredients

4 thinly sliced boneless, skinless chicken breasts
to taste salt
to taste pepper
2 TBSP, divided olive oil
2 cups sliced mushrooms
1/2 cup Marsala wine
1/2 cup chicken broth
1 cup heavy whipping cream
1 tsp ground mustard
1 tsp garlic powder
to taste fresh parsley, chopped (for garnish)

Directions

  1. In a large skillet over medium heat, add 1 TBSP olive oil and chicken
  2. Lightly salt and pepper
  3. Cook chicken until lightly brown cooked throughout
  4. Remove chicken and set aside
  5. Add 1 TBSP olive oil and mushrooms and saute' for 1-2 minutes
  6. Add Marsala wine and bring to a boil over medium heat for 1-2 minutes (this allows the alcohol to burn out)
  7. Add the chicken broth, heavy whipping cream, ground mustard, and garlic powder.
  8. Bring to a boil, reduce heat and simmer for about 10 minutes or until it starts to thicken
  9. Place chicken back into pan and continue to simmer 2-3 minutes
